I've been researching ...This is so interesting! I've been researching burials at Oak Hill Cemetery in San Jose and came across a burial record of a baby named Kenneth Jewett Bowman who died in 1871, the son of H. W. Bowman and Jennie R. Bowman. Turns out that Horace W. Bowman and Jennie R. Bush were married in Santa Clara County on on Nov. 27, 1871. On May 23, 1872, the San Jose Weekly Mercury reported that H. W. Bowman and his wife had transferred a lot of land to Mrs. Ann E. Bush "for love and affection." This leads me to believe that Horace's wife was Jennie Rhoda Bush, the daughter of Solomon and Ann E. Bush of San Jose. It appears that the couple separated later in the 1870s and as you discovered, Jennie eventually married her sister's husband William Dudley Plaskett. I believe she was several years older than him, and she was "creative" about her age in the census records. So far, I haven't found where Jennie is buried.
